Japan is a nation that deeply loves ramen. Besides rice and miso soup, ramen is arguably

the most popular , as evidenced by the tens of thousands of ramen shops of all sizes throughout the country.



The same is true in China, especially in the south where people love ramen, with Lanzhou beef ramen being the most famous

That's what I make.



There are two most important aspects to making ramen—the noodles and the broth.



The noodles are the soul of ramen and its main ingredient. If the noodles aren't good, no matter

how good the toppings and broth are, you can't make delicious ramen.



Good ramen is definitely not the convenience store kind sold in supermarkets, nor is it made with dried noodles. It must be made with the

freshest ingredients, pulled and made to order, to bring out the best flavor.



This morning, I started preparing the dough.



Usually, yeast is used to prepare dough, but I didn't use any other leavening agents; I relied

solely on hand-pounding to improve the flour's elasticity.



This single step took me two hours, and that's only

because ; otherwise, it would take four or five hours to knead it properly.



Of course, choosing the right type of flour is also very important.



The selection of ingredients for Lanzhou ramen in China is very particular. It

uses a blend of three parts high-gluten flour, two parts wheat flour, and five parts low-gluten flour, all mixed together. Only in this way can the flour ratio be perfect, resulting in noodles with exceptional elasticity.



The selection of flour, combined with hand-pounding, ensures the noodles won't break, and

their elasticity is unmatched by other ramen varieties.



Then there's the broth.



The broth for beef ramen refers to the beef soup. To make beef broth, you need beef rib meat, which

is three parts fat and seven parts lean—neither too greasy nor too dry.



This morning I bought five kilograms of fresh beef bones and three kilograms of high-quality beef ribs, along with

twenty-one kinds of seasonings including ginger, scallions, garlic, Sichuan peppercorns, and cinnamon, and simmered them in a large pot over high heat.



After an hour, I removed the beef ribs, which had shrunk to two kilograms, and then reduced the heat to low

to continue simmering the beef bone broth.



Afterwards, I started preparing the braising liquid, put the beef ribs into it to braise, and after an hour,

I took them out , let them cool slightly, and cut them into pieces three centimeters long, wide, and thick.



The top and bottom sides of the beef pieces were lean meat, with several layers of fat in the middle, making the beef ribs absorb

the broth easily and become more flavorful.



Now, there are only three pounds of beef left, which is almost half the original weight.



I divided them into three equal parts and will deal with them when I get home in the afternoon. As for the large pot of beef bone broth,

I will continue to simmer it over low heat; the longer it simmers, the more delicious the broth will be.



Because of this, when my six beautiful little wives returned home, the first thing they did upon opening the door was

to sniffle and run to the kitchen.
