Why do humans enjoy eating "sex organs"?

True crab roe is only found in female crabs; it consists of the ovaries and egg cells, is orange-red in color, has a slightly granular texture, and hardens after steaming. If it's dark brown, it might not be fully steamed or has already been fertilized. The thick, incredibly delicious, translucent substance in male crabs is crab paste, which is the accessory sex glands and their secretions, similar to prostate fluid in humans.


Shrimp
have an anatomy very similar to crabs, and their heads also contain delicious hepatopancreas. Sometimes, female shrimp even have a hard, roe-like substance (similar to crab roe). However, male shrimp don't have the well-developed accessory sex glands of crab paste. If you find "white worms" inside the shrimp's head, those are the male shrimp's spermatophores.
Few people can describe their texture or taste, as they're barely enough to fill a tooth gap. But if the shrimp is large enough, these "worms" are quite noticeable; for example, the spermatophores of a large lobster have a slightly chewy texture.


Fish
roe with tofu is a dish many people have eaten; it's the ovary of a female fish, which isn't unusual. There's something called "fish roe" or "white roe" that you might not have eaten. It's the testes of male fish, with pufferfish and cod testes being particularly prized for their deliciousness and considered a high-grade ingredient in Japanese cuisine.
Fish are animals that reproduce externally, so they release a large amount of eggs and sperm. Sometimes when preparing fish, you might see a "white broth" coming out of the anus; that's actually the fish's semen.


Why are these animals' gonads so delicious? To reproduce, gonads often accumulate nutrients such as fat, protein, and amino acids. Fat provides aroma and texture, while amino acids contribute umami flavor.
